Back up of important emails?

What is the best way to backup emails? If you journey thru my computer you cannot even find the file or program for Outlook-Express or Outlook. So to backup emails do you have to cut and paste the body of an email letter into a word document and save it. Then save its attachment with it? Then individually back up each letter?
Or is there a way to do a total inbox dump (for example) into a file for backup?
Or perhaps using a web based mail is safer.

I only have dialup access so updates r pretty near impossible, any clues how I can get updates another way?
