How we test frying pans

Which frying pans cook well and last the longest? Which are easiest to use and clean?

To make our recommended list, frying pans must be very good at cooking evenly and have a very durable cooking surface.

Overall scores breakdown

Performance

We cook pancakes to assess the evenness of cooking and non-stickability of each pan.

Surface durability

A mechanical arm scrubs each frying pan 10,000 times and any damage to its cooking surface is recorded.

Ease of use

We consider whether a pan is balanced and has a comfortable handle, and how easy it is to clean.

We also check how flat the pan’s base is. If it becomes concave when heated, the food could run to the outer edge of the pan, meaning it won’t cook evenly.
